'Bake Off' Has Got Us In The Mood For Something Sweet

So, last night’s episode of The Great British Bake Off has got us excited to get in to the kitchen and crack out the baking equipment. Inspired by the ‘fruit’ challenge, we love the look of this berry-topped cheesecake from Country Living. What’s even better – it doesn’t require opening the oven door and only take 30 minutes to prepare.


Ingredients

25 vanilla wafers
¾ cup of roasted, salted almonds
4 tbsp. of melted, unsalted butter
½ cup + 2 tbsp. granulated sugar, divided
1 ¾ cups of cold heavy cream
0.25 oz. of unflavoured gelatin
1 ½ cup of plain Greek yogurt
8 oz. of cream cheese at room temperature
2 tsp. of pure vanilla extract
¼ tsp. of salt

Method

1. Pulse wafers and in a food processor until finely ground. Add butted and 2 tablespoons of sugar; continue to pulse until well combined. Press mixture into the bottom of a 9-inch springform pan. Freeze for 20 minutes.

2. Pour the cream into a medium saucepan and sprinkle gelatin over the top. Let stand for 10 minutes. Cook cream mixture over a medium-low heat, stirring constantly for 4-6 minutes, until the gelatin is dissolved. Leave to cool for 10 minutes.

3. Combine the yogurt, cream cheese, vanilla, salt and remaining ½ cup of sugar in a food processor until smooth. Add cream mixture and process until well combined.

4. Pour filling on to the crust and smooth over with a rubber spatula. Cover the pan with plastic wrap and chill until firm – at least 6 hours.

5. Once ready, run a knife around the side of the pan and remove the ring. Top with your choice of berries.
